Under Site Actions > Site Settings, under Look and Feel, you will see the option for Title, description and icon. Once there, change the URL and Description path. You can point it to an image in the image library within the site, or even an external link (i.e., path to a public directory site with logo graphic)

In the world of Enterprise Information Architecture (EIA), we refer to this as clustering; i.e. the clustering of information at different levels. We also refer to it as grouping of information.

In SharePoint, we can group information at the following physical levels: Content Types, Lists/Libraries, Sites, Site Collections and Farms.

When I am working with an information taxonomy, I look for patterns that lend themselves to the logical grouping of that information. When I take the information taxonomy and apply it to a SharePoint Design, I try and keep the number of lists and libraries to no more than 10 to 15 per site. If I see a pattern that requires more, I look for a way to use sub-sites.

I have found this to be the best possible approach.
